If you could only eat one food for the rest of your life, what would it be?
This one is tough. If calories mattered, I would say fruit. If I had to choose one fruit it would probably be mangoes. I am obsessed with them! If calories didn’t matter, I would probably say chips. I love BBQ kettle chips, Pringles, and tortilla chips with salsa!
How long have you been vegetarian and why did you chose to do so? Was there one instance or experience that made you switch to the vegan lifestyle?
Growing up I was never a huge fan of meat. I ate some chicken breast here and there but my consumption of red meat was very sparse and I always hated fish. I used to give up meat for months at a time just to see if I could do it. After watching Food Inc. I gave up meat for good but I still consumed dairy and food products containing animal-based ingredients.
I continued to do some research and read some books such as The Kind Diet and Skinny Bitch and decided to challenge myself even further. After two years of being a vegetarian I decided to make the switch to full on vegan in September 2010.
Over the last month I have re-introduced some foods that contain animal products (mostly Greek yogurt). I started to feel like I was depriving myself and I was having trouble finding high-protein snacks. I thought that yogurt would do the trick (with 18 grams per serving). So far my body has responded well. I don’t know if it will continue but for now I still keep my intake of animal products to a minimum and try to get most of my nutrients from plant-based foods.
Do you ever feel like you don’t want to be vegetarian anymore?
No. I never get the urge to eat meat. Veganism though is a lot harder and while I was very strict about it, it was very easy to slip up. That is why I have become more lenient and have allowed myself to have some things when my body craves them. For example, fro-yo.
What kind of birthday cake do you eat? I mean cake has eggs, buttercream has butter. Do you ever miss real cake, brownies, or cookies?
I was never really a big fan of “typical” birthday cakes. I don’t really like cream or spongy cakes. I found this really good vegan carrot cake at a restaurant in my city and they actually allow customers to order an entire cake. I have ordered it on a few occasions and it was a hit, even for the non-vegans If I want real cake, brownies, or cookies though, I will treat myself! I just try not to eat too much of it.
Is there anything that you do really miss eating since becoming vegan that u haven’t found a really good substitute for?
Not really! They make some really crazy vegan treats that I have become obsessed with. Even though I allow myself some non-vegan things, there are a lot of vegan foods that I actually prefer. They tend to have healthier and more natural ingredients and they taste so amazing! See above photo When I was really strict about consuming dairy and the like, chocolate was the hardest thing for me. I have a weakness for M and Ms, chocolate chip cookies, Glosette raisins, Maltesers, and Reese PB cups so it was really hard. Now if I want them, I just eat them!

Ok so as most of you may already know, I am attending kind of like a summer school for high school teachers to get their qualification to teach Health and PE. We play all kinds of games every single day learning new skills and practicing old ones. I personally am pretty much learning new skills every day since I am not so sport savvy. Have me run for five hours and I’m your girl. Give me a tennis ball and I’ll throw it at your face.
Anyway, this week we are learning about “net games”. We have literally been throwing balls at each other for the last three days. On Monday we played BIG HANDS.
We literally had boards strapped to our hands with velcro and used them as paddles to whack balls back and forth. Fun? Yes, but for a maximum of 10 minutes. We played for an hour. Do you actually think a high school class would play with these things for an hour? I think not.
Thankfully we had tennis later on. I say “thankfully” but I’m not that good at tennis either (surprise, surprise). BUT I do enjoy it. A lot. I enjoy it even more because I get to play and hang out with some pretty awesome girls.
