I am totally copying Jess with this post. I mean, I’ve done a few “Let’s Catch Up” posts in the past but when I saw her on Sunday (YES FINALLY REUNITED AFTER SEAWHEEZE!!) she mentioned she was planning a coffee date post for this week. I thought I should maybe do one too even though my life is not nearly as exciting. So grab a coffee, or in my case a Diet Dr. Pepper (which I am drinking while writing this at 8:30am). Nope, still haven’t quit diet pop.
Currently drinking: Aside from diet pop and water, I’ve had more lattes this month than I’ve had all year. I don’t know if it’s the fact that the weather has cooled off or if Starbucks has sucked me in with those damn red cups…but my caffeine consumption has reached an all time high. I’m okay with it. My wallet is not.
Currently eating: Oh She Glows Crowd Pleasing Caesar Salad. If you know me, you know I struggle with salads. I get so bored of them but this one is actually mind-blowing. Have you ever used “mind-blowing” to describe a salad?! Didn’t think so. The recipe is from her most current cookbook (Oh She Glows Everyday) but I actually found it on her blog as well. The recipe for her vegan parmesan is a lot more simple in her cookbook (I believe it’s just cashews, nutritional yeast and salt) so I can’t speak for the one on her site. The dressing is very similar though (more Dijon in the cookbook version).
Anyway, it’s worth the try for sure. I’ve made the dressing three times this month and just toss it with a kale/romaine mix. Sometimes I make the chickpea croutons, other times I just throw a veggie burger on top. It’s so good.
Currently reading: The Girl On The Train. I brought this book with me on a flight about a million years ago and never got around to reading it because I fell asleep. I just re-started it and am pretty excited because (a) I’ve heard it’s amazing and (b) I haven’t read an actual book in so long.
Currently swooning over: These adidas ultra boosts that I just ordered from the Sport Chek website. I had a gift card from my cousin so it’s like I got them for half price! A new training cycle will be starting soon and that calls from some new shoes, right? I have a lot of adidas but only a few are reserved for running and they are getting pretty close to retirement. It was time!

Coolest experiences in November: Running the NYC Marathon, attending a Raptors game with adidas Canada, and meeting Jay (finally)!
