WIAW: CURRENTLY LOVING

Hey there, fellow Athletarians!

So, my day didn’t start as planned. I’d taken the day off for a doctor’s appointment, but, guess what? The scheduling went awry, and my doctor wasn’t even in! Talk about a mix-up. The silver lining? My next appointment is now scheduled for July 8th. But, on the bright side, I got to relish an extra-long morning run (hit the 10-mile mark!) and spent some quality time with my favorite fur buddy. Instead of the usual ‘What I Ate Wednesday’ (WIAW), inspired by Gemma, I’ve decided to showcase some of my current foodie obsessions from the past week. It gives me an avenue to share some gems without diving deep into a day’s worth of meals. I do enjoy WIAW, but occasionally, it’s refreshing to mix things up a bit.

One of the week’s highlights was my dinner date with my cousin at Fresh. I’d been raving about their butternut squash tacos which I’d sampled over the weekend. Good news? They’re extending this dish through June! Hello, taco-filled month! (Insert image)

Pro-tip: if you find yourself at Fresh, don’t skip their grilled cornbread with hummus. Paired with a bowl of soup, it’s a delightful experience. I find myself ordering it nearly every visit! (Insert image)

Recently, I’ve been on a smoothie kick for breakfast, but there’s something about the convenience of overnight oats. The other day, craving a ready-made breakfast, I revisited Angela’s trusted overnight oats recipe. Voila! Woke up to a chilled, delicious treat waiting for me. Top it up with some berries, and it’s the perfect start to the day. (Insert image)

Speaking of favorites, have you tasted white peaches? They’re distinctively delicious compared to their counterparts. It’s unfortunate they aren’t in season all year, but I ensure I make the most of them while they last! (Insert image)

Rekindling an old love, I brought back kale chips into my diet. Today, instead of opting for a salad or smoothie, I transformed my fresh kale stash into crisp chips. A toss in Vega Antioxidant Omega Oil Blend, some nutritional yeast, a pinch of sea salt, and baked to perfection at 350°F for 12 minutes. A crunchy delight! (Insert image)
