WIAW: ONE OF THOSE MORNINGS…

Hey Athletarian community! Just a heads up: some fun enhancements are coming to the blog soon, and I’m stoked about them! While the main focus will be a design revamp, I’ll also be fine-tuning a few of my pages. As a sneak peek, I’ve already given my About Me page a fresh look with some photos from my recent shoot. Time for a bit of digital spring cleaning, right?

Despite my earlier reservations about the ‘What I Ate Wednesday’ (WIAW) concept, some of you expressed a keen interest in getting a peek into my daily plant-based athlete diet. So, for today, let’s dive right in!

Some mornings, my usual go-to meals don’t quite hit the mark. Typically, my trusty Vitamix sees a whirlwind of fruits, veggies, and other nourishing ingredients as I whip up my staple breakfast smoothie. This routine, made more efficient with my pre-made frozen smoothie bags, didn’t appeal to me yesterday. Instead, I opted for a swig of Vega Pre-Workout Energizer (a lifesaver, even on non-workout days!) and a protein bar to kick-start my day.

Inspired by Angela’s blog, I planned to prepare a bean salad, one of my all-time favorite quick meals. But, in a delightful twist, my mom and I were on the same foodie wavelength. She surprised me with a freshly-made bean salad! Mixed with quinoa, it’s a nutritious and delightful lunch.

The warmer temps have awakened my watermelon cravings. Who else is on this boat?

Post-work hunger pangs hit me hard, always. Perhaps I should stash some healthy car snacks. Nonetheless, my immediate solace? Avocado toast! A delicious combo of whole grain bread, creamy avocado, sea salt, pepper, and a sprinkle of chili flakes.

Dinner was an eclectic mix: Mary’s GF crackers, hummus, sweet potato chips, fresh avocado, and a side of berries. Sounds random, but trust me, it’s a delightful combo.

Ever had that moment where you’re all set for bed, and your stomach suddenly disagrees? Found myself grabbing some Vega Recovery Bites, not from a strenuous workout, but hey, preparing for the next day counts, right?

On a lighter note, did anyone ever notice how the creases on a thumb could look like a smiley face? Maybe it’s just me being quirky, but hey, food does bring smiles!

Wrapping it up, my food choices might seem mundane to some, but they reflect the life of an athlete powered by plants. This morning’s craving? Cold sweet potato dipped in hummus. A bit unconventional, but hey, why not?
