I feel so disconnected! I have so many started blog posts but have been caught up doing so much over the last few days. We had a death in the family last week and then I had my aunt, uncle, cousins, and grandparents over on the weekend for a belated birthday lunch. I’ve been a little bit busy, to say the least. I haven’t even been to the gym since last week. Not awesome.
I also tried a new recipe! My friend sent me a recipe for protein bars/balls last week so I decided to try them out (with a few changes) and they came out really good. They are packed with nutrients and flavour and the changes makes them vegan-friendly (I used VEGA protein and agave instead of whey and honey).
- 2 cups oatmeal
- 1 cup Vega Sport Performance Protein in chocolate
- ¼ cup ground almonds
- ⅓ cup dried cranberries
- ½ tbsp cinnamon
- 2 tbsp hemp hearts
- ⅓ cup natural peanut butter
- ¼ cup agave
- 1 cup (or more/less) almond milk
- ¼ cup apple sauce
- 1 tsp vanilla extract
- Mix dry ingredients in a bowl until well-combined
- Add wet ingredients in a separate bowl, microwave for 30 seconds and mix until well-combined
- Add wet ingredients to dry ingredients and mix (add more almond milk if needed)
- Form into balls
- Refrigerate for at least 2o minutes before eating
*Depending on what kind of protein powder you use, the amount of almond milk will change. The original recipe only called for ¼ cup and I used over 1 cup so start with less and add more if batter looks to dry.
I got 18 balls out of the batch but you can make them as big or small as you like. I hope you enjoy them as much as I do!
P.S. Remember my friend Emily that I talked about who was running 100 miles in 24 hours on a TREADMILL?! Well…she ended up hitting the 100-mile mark WAY early so finished up at 108.8 miles in 22.5 hours. So crazy. I was asking her yesterday what she ate/drank during the run and aside from some “regular” food (i.e. bagels with PB), she ingested crazy amounts of Vega.
‘She/her’ refers to our friend Cristina over at Vega. So now I know exactly what I need when I run 100 miles. Haaaaaaaaaaaaaa. Don’t hold your breath. Not happening in my lifetime.
