First thing’s first. The doctor can see me TOMORROW. Wa-freaking-hoo. Mr. McBUSY finally had a time slot where he could fit me in. Hopefully I can stop talking about going to see a doctor now that I’m actually going to see one. Hah.
ANYWAY, yesterday I met up with Angela to go to the Toronto Vegetarian Festival. I had never been to it but heard they gave out lots of samples so that was good enough a reason for me to go. But before we ate, we went to go eat. Makes sense, right? We went to Fresh, my most favourite place ever. I used to go to this restaurant 2-3 times a week and now I never go so I was pretty excited.
We ordered fresh juices and salads and sat in incredible lighting that made my face look 19 times lighter than it already is.
We walked just over 2km to veg fest and my first mission was to find a vegan Nanaimo bar because I had seen more than one person post it on instagram and I knew it had to be good.
Mission accomplished within the first few minutes.
Next up was to stalk our fabulous friend Michael at the Vega booth and pick up some sweet Vega socks. Everyone needs Vega socks. They make me want to work out with no shoes on so that people can see the logo when I walk.
Finally, we asked strangers to take our picture since this was mine and Angela’s first one-on-one date. It needed to be documented.
Now I literally just made this salad and inhaled it. It might not seem like a “recipe” because it’s so simple, but I still wanted to share. It was so SO good.
- 2 cups kale (chopped)
- ½ an avocado (chopped)
- kalamata olives
- 1 tbsp hummus
- 1 tbsp hemp hearts
- lemon juice
- sea salt
- Massage kale with sea salt to break down leaves (or else they will be very tough).
- Add hummus, lemon juice, and chopped avocado. Mix well until all leaves are coated with dressing.
- Top with olives and hemp hearts.
