I had another post scheduled for today but then I ate my lunch and it was so delicious that I just couldn’t wait to share it with you. I was famished after doing plyos this afternoon and lucky for you, I took some pictures of my workout (I don’t live in a dungeon, I swear – that’s my unfinished basement).
YOU try taking motion pictures with an iPhone before you make fun of my picture quality. The workout was hard. Jump squats, jump lunges, jump rope…a whole lotta jumping going on.
I needed something quick or I would have eaten my fridge whole. So I made THIS:
Last week I bought a pack of Flatout Wraps in Light Sundried Tomato and I must say although they are not super “clean”, they are delicious (and low cal/high protein). You could always use an Ezekiel or whole wheat wrap, I just really like the sundried tomato flavour. I topped it with some quinoa I made last night (can also use brown rice if you don’t have quinoa), chopped bell peppers, cucumber, guacamole, and salsa. This is what it looked like before I was done with it:
I then rolled it up and “grilled” it on a non-stick pan with a little coconut oil until it got crispy. This is the most important step. If it’s not crispy it just won’t be the same.
Next step: devour and smile.
