SPIRAL GOING VIRAL (AND THE BEST SALAD DRESSING EVER)!

I’ve recently been entranced by my new kitchen gadget: the spiralizer. Though I’d introduced it to you all last week, I only really started exploring its magic yesterday. Admittedly, Princeton’s adorable antics have been taking up most of my time. Just one glance at him and I’m smitten all over again!

When Dean and I finally embarked on our spiralizing adventure, it felt like unwrapping a gift. We dove straight into spiralizing the fresh veggies we’d picked up from the farmer’s market. The result? A delightful salad featuring carrots, yellow beets, and the stunning candy stripe beets. If you’ve never encountered candy stripe beets before, they’re a visual treat with stripes reminiscent of candy canes. Their vibrant pink hues brighten any dish without the messy bleed of red beets.

Next, we transformed both yellow and green zucchinis into playful “pasta” noodles. There’s just something about spiralized veggies that makes them so much more enticing. And I’ve already got visions of creating healthy curly fries soon!

Craving the renowned peanut lime dressing from Fresh, I scoured the web for a simplified version and then added my own twist. Here’s the revamped recipe for you:

HONEY PEANUT LIME DRESSING

  • 1 Tbsp honey
  • 3 Tbsp natural peanut butter
  • Juice of one lime
  • 2 Tbsp freshly chopped basil
  • 1 Tbsp red chili flakes
  • 2 tsp tamari
  • 1 tsp garlic powder
  • Zest of one lime

This concoction boasts the perfect balance of sweetness, spiciness, and a rich peanut flavor. I’m gleefully anticipating using the leftover dressing today!
