Spiral going viral (and the BEST salad dressing ever)!

by Christina @ The Athletarian on July 31, 2012

My spiralizer is my new obsession.  I knew I would like it but didn’t think it would be this much.  I posted about it last week but didn’t even crack open the box until yesterday.  Princeton still seems to have all of my attention these days.  Do you blame me?!

I die every time I look at his little face.

Dean and I broke out the sweet gadget and it was so.much.fun.  I just wanted to spiralize everything in my fridge.  We started with the veggies we bought at the farmer’s market last week.  We made a salad with carrots, yellow beets, and candy stripe beets.  I had never heard of candy stripe beets but they are the coolest things.  They are striped on the inside like a candy cane and have an amazing pink colour to them (and they don’t bleed like red beets).

We also spiralized a yellow and green zucchini to make “pasta” noodles.  Don’t spiralized veggies just look like more fun to eat?  I can’t wait to make ‘clean’ curly fries!

I really wanted a peanut lime dressing like the one from Fresh but I checked their recipe and there were about 37 ingredients.  I searched for a recipe online and came across this one but modified it a little (I winged it based on taste but I *think* my measurements are fairly accurate).

1 Tbsp honey
3 Tbsp natural peanut butter
Juice of one lime
2 Tbsp chopped fresh basil
1 Tbsp red chilli flakes
2 tsp tamari
1 tsp garlic powder
Zest of one lime

It’s sweet, spicy, and peanutty all at the same time.  I’m excited that there were leftovers so I can have it again today! :)

I had a lot of people ask about my spiralizer on Instagram, Facebook and Twitter.  If you’re interested, the brand is Paderno and I got it here in Toronto at Juicers For Life.  I know you can order them on Amazon if you live in the US as well.

Do you like beets?  Have you ever seen/heard of candy stripe beets?

Are you team peanut butter or almond butter (or both!)?

3 Jenn @ Run It My Way July 31, 2012 at 9:21 am

YUM that looks good!! Haha I think the chances of finding a spiralizer in Cape Breton are slim to none, but I’ll keep an eye out online, that salad looks amazing!

4 Christina @ The Athletarian August 3, 2012 at 10:14 am

I think you can order it online! Let me know if you find it!

I wish you lived closer so all of the puppies could be friends! Princeton gets his first haircut today. I’m like a crazy proud dog mom!

9 Lindsey July 31, 2012 at 10:07 am

I am sooooo team PB, but have cut down so much. I was eating a jar a wk for a while, HA. Now down to a few spoonfuls a week. :)

16 Christina @ The Athletarian August 3, 2012 at 10:24 am

Hahaha yes! If you canget a good deal on ebay, I say go for it! You will have so much fun with it!

PB is very addictive! I only have it a couple times a week too!

17 Felicia July 31, 2012 at 11:10 am

18 Christina @ The Athletarian August 3, 2012 at 10:25 am

19 Lenka July 31, 2012 at 12:22 pm

I’ve never heard of candy-striped beets but I might have to try them, especially if they don’t bleed!

20 Christina @ The Athletarian August 3, 2012 at 10:26 am

Yes! I don’t eat a lot of the red beets because they are such a pain! The candy stripe and the yellow ones are NOTHING like the red ones though!

21 Beth @ RUNNING around my kitchen July 31, 2012 at 12:51 pm

I have gotten way behind on blogs and am trying to catch up…..anyway, Princeton is still ADORABLE! And this spiralizer looks amazing!!! I can already foresee this will be my new obsession :) And thanks for so many great links to so many amazing looking healthy recipes!!!

22 Christina @ The Athletarian August 3, 2012 at 10:28 am

I have so much catching up to do too so don’t feel bad! Princeton is gerting so much attention on the blog, I think I should change my name to The Dogitarian! Haha! He really is the cutest thing ever though. I love him. Hope you’re doing amazing. Can’t wait to catch up on your adventures!

23 Ali Mc July 31, 2012 at 1:52 pm

question: (and answer honestly) do you and Dean style Princeton’s hair?? it looks like he’s wearing gel ;) lol

PS: I want to spiral everything now too! I say email the company and do a giveaway!!!!!!! :D please

24 Christina @ The Athletarian August 3, 2012 at 10:30 am

Hahahahaha!! NO, we do not style his hair! It just looks likethat all the time. I think it’s just getting too long. He is getting a hair cut today so maybe that will help!

Emailing the company is a possibility! That would be a great giveaway!

25 Chelsey @ Powerhouse Fit Foodie July 31, 2012 at 4:13 pm

I LOVE my spiralizer too! It really does make eating things so much more fun! My little cousins will eat veggies they would never usually touch, all because they look so fun!

26 Christina @ The Athletarian August 3, 2012 at 10:32 am

Just like me! I amso unenthused when it comes to eating vegetables, this has made it so much easier (and fun)!!

27 Danielle @WorkItWearItEatIt July 31, 2012 at 9:46 pm

28 Christina @ The Athletarian August 3, 2012 at 10:32 am

29 Jessie August 1, 2012 at 12:01 am

It just looks like so much fun, haha. I’ve never had beets before.. and I’m not quite sure why?? PB & AB are a tough race.. but I’ll have to go with PB! :)

Have a great day girl!

30 Christina @ The Athletarian August 3, 2012 at 10:34 am

You’ve got to try beets!! PB wins by a bit for me too! It is just SO good!

Happy Friday!

31 Rachelle August 1, 2012 at 2:50 pm

Oh my goodness that all looks so delicious!! I love all of the color. :) I am totally like a small child and will eat anything that looks pretty.

32 Christina @ The Athletarian August 3, 2012 at 10:37 am

Hahaha I am exactly the same way! The more colours, the better!

33 Haley @Running Towards Recovery August 1, 2012 at 4:40 pm

I have always wanted a spiralizer!! Your salad looks delish :) I love anything with peanut butter.
I know you have left me super sweet comments before, but this is my first time reading yours :) I’ll have to make it a habit! You are adorable.
xoxo Haley

34 Christina @ The Athletarian August 3, 2012 at 10:38 am

Me too! PB just makes everything better!

Thanks so much for stopping by and for the nice comment! I hope you have an amazing day!

35 Britt @ Chicago Runner Girl August 1, 2012 at 4:52 pm

Yum that dressing sounds delish! We have zero ingredients in our house these days because we’re moving in two weeks, but once my home is fully stocked again this is on my list!

36 Christina @ The Athletarian August 3, 2012 at 10:39 am

Moving!!! Is there room for me?!?! :)

37 Rebecca August 1, 2012 at 5:04 pm

Which spiralizer did you buy? I cant tell from the pic :-)

38 Christina @ The Athletarian August 3, 2012 at 10:40 am

It is by Paderno!

39 Lori Cipolla August 1, 2012 at 7:55 pm

It looks delicious!!!! What would you use to substitute peanut butter in dressing ? Two of my kids have a nut allergy :-(

40 Christina @ The Athletarian August 3, 2012 at 10:42 am

Hmm someone said they would try it with almond butter but Ithink the flavour would change a lot. Have you tried sunbutter? From what I hear, it is really good and can take the place of PB!

41 Lori Cipolla August 3, 2012 at 11:36 pm

I will try the sunbutter . My daughter has an allergy to almond as well . Thanks so much , Lori

42 Electra @ Vanilla Bean Lean August 1, 2012 at 8:21 pm

OMG. You just convinced me! A spiralizer will be my next kitchen gadget buy. I cannot wait!!! Zucchini spiralized “noodles”?! YES. PLEASEEEEE. ;-) So psyched. And I don’t blame you for just opening it, that puppy face is just too darn precious!!!

And I am on team no-nut-butter, I have found that I’m super intolerant to nuts and swell up like a balloon from them. No nuts = happy body, so I have been listening and will continue to listen because it’s so nice to feel good and non-blimpy :-P ! You rock lady!

43 Christina @ The Athletarian August 3, 2012 at 10:44 am

The noodles are amazing! You would have so much fun with it!

I am so sad you can’t eat nuts :( What do you do for healthy fats? Avocados and fish, I’m guessing?

Happy Friday! xoxo

44 Julia @ Pain, Pride, Perseverance August 13, 2012 at 2:05 pm

now i need a spiralizer thingy AND to make this dressing:)

45 Laura Gay November 4, 2012 at 12:11 pm

Say, did you cook the “noodles” in this picture? I’m thinking of ordering this gadget to make appetizer for my son’s graduation party in May and the less cooking the better. I’m doing fruit cabobs and veggies. Thanks!

46 Ali @ Inspiralized August 12, 2013 at 6:56 pm

Definitely team almond butter :)
