Spiral going viral (and the BEST salad dressing ever)!

My spiralizer is my new obsession.  I knew I would like it but didn’t think it would be this much.  I posted about it last week but didn’t even crack open the box until yesterday.  Princeton still seems to have all of my attention these days.  Do you blame me?!

I die every time I look at his little face.

Dean and I broke out the sweet gadget and it was so.much.fun.  I just wanted to spiralize everything in my fridge.  We started with the veggies we bought at the farmer’s market last week.  We made a salad with carrots, yellow beets, and candy stripe beets.  I had never heard of candy stripe beets but they are the coolest things.  They are striped on the inside like a candy cane and have an amazing pink colour to them (and they don’t bleed like red beets).

We also spiralized a yellow and green zucchini to make “pasta” noodles.  Don’t spiralized veggies just look like more fun to eat?  I can’t wait to make ‘clean’ curly fries!

I really wanted a peanut lime dressing like the one from Fresh but I checked their recipe and there were about 37 ingredients.  I searched for a recipe online and came across this one but modified it a little (I winged it based on taste but I *think* my measurements are fairly accurate).

HONEY PEANUT LIME DRESSING

1 Tbsp honey
3 Tbsp natural peanut butter
Juice of one lime
2 Tbsp chopped fresh basil
1 Tbsp red chilli flakes
2 tsp tamari
1 tsp garlic powder
Zest of one lime

It’s sweet, spicy, and peanutty all at the same time.  I’m excited that there were leftovers so I can have it again today! :)

YUM that looks good!! Haha I think the chances of finding a spiralizer in Cape Breton are slim to none, but I’ll keep an eye out online, that salad looks amazing!

You have def convinced me to buy one! I’ve had one in my watch list on Ebay forever.
I am sooooo team PB, but have cut down so much. I was eating a jar a wk for a while, HA. Now down to a few spoonfuls a week. :)

Yes! I don’t eat a lot of the red beets because they are such a pain! The candy stripe and the yellow ones are NOTHING like the red ones though!

Hahahahaha!! NO, we do not style his hair! It just looks likethat all the time. I think it’s just getting too long. He is getting a hair cut today so maybe that will help!

Hmm someone said they would try it with almond butter but Ithink the flavour would change a lot. Have you tried sunbutter? From what I hear, it is really good and can take the place of PB!

OMG. You just convinced me! A spiralizer will be my next kitchen gadget buy. I cannot wait!!! Zucchini spiralized “noodles”?! YES. PLEASEEEEE. ;-) So psyched. And I don’t blame you for just opening it, that puppy face is just too darn precious!!!

And I am on team no-nut-butter, I have found that I’m super intolerant to nuts and swell up like a balloon from them. No nuts = happy body, so I have been listening and will continue to listen because it’s so nice to feel good and non-blimpy :-P! You rock lady!
