I have been making Chocolate Covered Katie’s vegan pancakes probably every single morning for the past month or so. I’ve been using this recipe as the base and change up the extract or fruit for a little variety. This morning I woke up and as much as I am obsessed with these pancakes, I missed my oatmeal! I whipped up a nice warm bowl and it may have been the most delicious bowl of oatmeal I have ever eaten.
In the mix:
- 1/2 cup oats (measured dry)
- 1 tbsp chia seeds
- 1 tbsp xylitol (you can use any sweetener)
- pinch of sea salt
- 1/4 tsp coconut extract
- 1/2 tsp sugar-free maple syrup
- sugar free chocolate chips for topping
I just mixed the first six ingredients, added boiling water, and then topped with the chocolate chips. The ingredients are very similar to what I use when I make the pancakes, just this is in oatmeal form. SO GOOD. Oh, and triple C = chocolate, coconut, and chia 😉
I am still having a hard time walking and climbing stairs but I have another race this Sunday. It’s just a 10K so I’m not too worried but once again, I am not allowing myself to have a time goal. I doubt I will be able to get much running done this week so Dean and I will most likely wing this race too! Hopefully it doesn’t hurt as bad as last weekend’s half marathon!
Dean has run this race twice before and it’s supposed to be really nice and flat so I’m really looking forward to it. After this I am going to take a break because I’m slacking with my weight training! I’m on week two of James Wilson’s program but had to push the days back because of the soreness of my legs. It will all work itself out though!
