Remember how I told you that I was given the opportunity to share three recipes from The Eat Clean Diet Vegetarian Cookbook with you?! I have the first one for you today! This one is really easy and refreshing. It can either serve as the perfect start or a satisfying end to a meal (or even as a snack!).

I had to make a few modifications/eliminations because I was not able to find some of the items. It’s weird because I have seen some of these items (i.e. kumquats and blood oranges) at local grocery stores but for some reason both of the ones I went to did not have these items!! I therefore ended up with a five citrus salad, but it was still tasty!
I ended up using 1 mandora tangerine, 1 ugli fruit (and it really was “ugli” – I thought they were all bruised but an employee told me that was what they looked like!), 1 Cara Cara orange, 1 minneola orange, and 1 grapefruit.
All I did was peel each fruit and separate all of the segments. The ugli fruit and grapefruit took a little more work though. I removed the membrane from these segments too. The recipe doesn’t call for the grapefruit membrane to be removed but I usually eat my grapefruit this way (to reduce the bitterness) so I went ahead and did it. Once everything was peeled, I added it to a bowl with some finely chopped mint and voilà! I had myself a vibrant and refreshing citrus salad!
The great thing about this salad is that you can modify it however you would like. I know Monika made it with cactus and pineapple and it looked super yummy! Send me a picture if you decide to try it out and I will feature it on my blog!
**Tosca posted some really sad news on her blog yesterday in regards to Bob’s health. My heart is breaking for her and her family. Please pray for Bob and keep him in your thoughts. Miracles DO happen**

I wanted to make this but I think some of the fruits are out of season now – like the blood oranges. I considered making modifications but just wanted to get in and out of the grocery store quickly last night. I will attempt next time; it looks delicious!
I am constantly thinking and praying for Bob, Tosca and their family. I feel like I’ve “known” them for so long- they’ve been so inspirational and changed my life. My heart is truly hurting for them, I can’t imagine what they are going through. Miracles definitely do happen, keep praying

This sounds like such a refreshing summer salad! I never think to add mint to things but it really lightens up dishes. I read Tosca’s blog post and my heart goes out to her family.
I’ve never tried a fruit/mint mix…except for in gum! Sounds interesting, I will have to try it out!

I can OD on citrus any time! I LOVE them (and so does Tessa)! I actually just got some blood oranges today, although I don’t know how to eat kumquats. Do you peel them??
