GUILT-FREE DELICIOUSNESS

Post-celebration indulgence during a weekend (courtesy of some loved ones’ birthdays) had me yearning for pure, healthful nourishment. When we talk about nourishment, it often comes with a trade-off: taste vs health. But what if we could combine the savory allure with the health quotient? The answer is – we absolutely can.

While exploring some fellow plant-based blogs, I stumbled upon a delightful recipe that caught my eye. Aside from its tasteful appeal, the blogger behind the recipe also showcases her dedication to the plant-based lifestyle, evident in her fitness. She introduced me to what she termed “protein puffs”. While the original version utilized eggs, I tweaked it to align with our plant-based ethos, and it worked wonders!

Cinnamon “Sugar” Protein Puffs (Inspired by Vanilla Bean Lean)

Ingredients:

  • Aquafaba (liquid from a can of chickpeas – I used about a cup),
  • Cinnamon,
  • Zero-cal sweetener,
  • Xanthan gum (optional – I used just a hint, about 1/8 tsp)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk the aquafaba with a hand mixer on high until it forms stiff peaks. Patience is key here as this forms the base of our puffs.
  3. Gently fold in the xanthan gum (this helps the puffs maintain their structure), cinnamon, and sweetener. Adjust the sweetener to your liking; I tasted and adjusted until I achieved the perfect balance.
  4. Using a spoon, drop small mounds of the mixture onto a baking sheet.
  5. Bake for about 12 minutes or until the tops turn a light golden brown.
